Minute Cake.

This recipe comes from a great French cookbook called Classiques de grand-maman from Marie-Claire Frederic.
It is full of classic recipes my grand-mother and mother used to do when we were children. I love it because each recipe uses simple and cheap ingredients. It is not the sophisticated French gastronomy but the down-to-earth generous French cooking for families and friends.

For this simple cake, I used approximately 75g of plain chocolate chips, but you can also use sultanas soaked in 2 tablespoons of rum.

  • Preheat the oven at 180C.
  • Mix 125g soft butter with 100g caster sugar until it is of a creamy consistency (if you have a food processor even better!). Then add 2 eggs (one at a time) to the mixture.
  • In a separate bowl, mix 125g plain flour with 1 teaspoon baking powder. Add the chocolate chips or sultanas.
  • Add the dry mixture to the wet one (butter + sugar + eggs).
  • Pour the mixture into a greased baking dish.
  • Sprinkle one teaspoon caster sugar over the mixture.
  • Put in the oven for 30 minutes at 180C.
